Hangover Cures

We all know the sensible thing to do is not to drink to the point of a hangover in the first place but let’s face it, it happens to us all at one point or another so how can you minimize the fallout? Below are a list of remedies and old wives tales which aim to cure.

We are in no way saying any of these are a good idea or that they are likely to work so take it all with a hefty pinch of salt and good humor and bear in mind we are a Glasgow Restaurant not doctors!

01. Hair of the Dog

In case you’d not heard of this cure it’s the idea that having an alcoholic drink the morning after will help ease the pain. This will only appear to cure your hangover as it introduces more alcohol into your system and effectively numbs you to the previous nights shenanigans, in truth, it only suspends the effects until your ‘hair of the dog‘ wears off and then hits you with a vengeance. If you are going to go down this route then it’s been claimed more than once that a Bloody Mary is the way to go..

Ingredients

1 1/2 oz vodka

3 oz tomato juice

1 dash lemon juice

1/2 tsp Worcestershire sauce

2 - 3 drops Tabasco® sauce

1 lime wedge

Method

Shake all ingredients (except lime wedge) with ice and strain into an old-fashioned glass over ice cubes. Add salt and pepper to taste. Add the wedge of lime and serve.

02. Water

This is the only point thats tried and tested. The nature of alochol makes you visit the little girls/boys room more often therefore making you dehydrated, it also reduces the amount of potassium in your body which is what causes the dizzyness, cramps etc. When dehydrated the brain shrinks away from your skull slightly and is not as well supported hence the pounding headaches. Best you can do for yourself is rehydrate as much as possible.

03. Coffee, coffee, coffee

Hands up those of you who immediately reach for the coffee the morning after…thought as much! We all do it, but it’s possibly one of the worst drinks we could be having (if you ignore the hair of the dog) Coffee is a diuretic and therefore makes you pee more than normal, add that to the fact that you are already dehydrated from the night before and you’re just asking for the headache to last longer. As was said in point 2, you can’t beat a good pint of water, or at the very least wash your coffee down with a good drink of water!

04. Fry up

The sheer amount of calories in a fry up goes towards giving your body an energy boost to help you get through the day. And there are some claims that cysteine in eggs that helps clean up all the toxins. Only problem with a fry up is it smells amazing, looks great but can you get past the first mouthful!

05. Sleep

You’ve put your body through alot and it has a fair amount of repairing to be getting on with. If you have the time and your pounding head will let you then try to get more sleep. This will let your body repair itself faster without having to devote energy to general day to day functions such as moving!

Can Chocolate Affect Your Sex Life?

From the time the first coca beans were harvested by the Mayans, there has been the belief that chocolate has a euphoric impact on the body’s senses. The conquistadores saw the Emperor Montezuma of the Aztecs consuming a large quantity of cocoa in the form of a beverage called chocolatl before entering his harem. The invading Spaniards spread the Emperor’s belief that cocoa was an aphrodisiac and brought it to Europe. This belief was also shared by one of history’s most famous lovers, Giacomo Casanova.

Since then, the use of chocolate as part of the mating ritual has been firmly established. . More recently it has been shown that not only does chocolate increase the sexual appetite but also produces a sense of elation similar to an orgasm.

It has only been in recent times that scientists have unravelled chocolate’s psychotropic properties and the effects it has on us. Chocolate has been found to contain modest amounts of the stimulants caffeine and theo-bromine, (much less than in coffee or tea) Chocolate is also known to generate increased levels of serotonin, a chemical naturally produced by the brain, which is known to reduce anxiety. Serotonin is most commonly associated with the effects of marijuana or getting ‘stoned’ (you would have to eat 25lbs of dark chocolate at once to achieve the same effect).

Neither of these properties by themselves provides the connection between eating chocolates and heightened sexual pleasure. It is in fact the rush of endorphins produced by eating chocolates, particularly dark chocolates, which is most similar to the bliss associated with a healthy sexual relationship. Chocolate also contains phenyl-ethylamine which is known to stimulate the release of dopamine into the pleasure centers commonly associated with an orgasm.

In addition to this scientific evidence, a great deal of behavioral research has been done to study the sexual behavior of women who eat a lot of chocolate and those who don’t. The conclusion of this is that women who consume large quantities of chocolate have more satisfying sex lives. However the reverse correlation could also be assumed where women with satisfying sex lives tend to eat more chocolate.

Despite the fact that the relationship between sex and chocolate can’t be proven with 100% certainty, the scientific evidence combined with behavioral studies provides a compelling argument for cocoa’s impact on our sexual drive - it is convincing enough for chocolate to have become a part of my daily diet!

I recommend that you buy chocolate with a high cocoa content which taste better and do not contain extra sugars and oils like candy bars found in most shops. My personal favorite, Neuhaus chocolates, is an example of where you can get dark chocolate with a high cocoa content and a resulting surfeit of pleasure. To paraphrase the Song of Solomon, ‘Stay me with flagons and comfort me with chocolates, for I am sick with love’.

Cream of Coconut Dip

Ingredients:

½-cup Coconut, shredded
1-cup Marshmallow cream
3-tablespoons Raspberry preserves
1-cup Whip cream
¼-cup Pecans, chopped
1-teaspoon Orange peel

Instructions:

Microwave marshmallow cream in medium bowl, about one minute, stir in preserves until smooth; stir in coconut and orange peel. Add whip cream and pecans, mix well. Cover and refrigerate for two hours. Serve with fresh fruit for dipping or add fruit of your choice and make it a fruit salad. This is also a great topping for pies, waffles or pancakes.

Makes about 2 cups

Note: To change this recipe up toast coconut before adding or replace the raspberry preserves with strawberry preserves.

Green Tomato Pie Recipe, Have You Tried Green Tomato Pie?

Here is a traditional southern pie that has long been ignored. But no more. Green Tomato Pie is making its comeback!

The tomatoes for this pie should be truly green. You might find them at the grocers, but chances are you’ll have to grow your own or go to the farmer. I think that the difficulty of finding the green tomatoes is the reason that this recipe has been ignored for so long. Hopefully you have a pick your own fruit farm nearby. Be sure to tell the farmer that you want green tomatoes before you begin picking, he may direct you to a different area. While you’re there get a few extra for Fried Green Tomatoes as well.

The flavor of green tomatoes is very tart. The sugar counteracts the tartness for a truly tasty pie filling.

Green Tomato Pie 4 c. green tomatoes, thinly sliced1 1/4 c. sugar1/4 tsp. salt1/2 tsp. cinnamon4 or 5 tbsp. flour1/2 tsp. nutmeg2 tbsp. vinegardough for 1 double pie crust,(top and bottom) unbaked1/2 c. raisins2 tbsp. butter in small pieces2 tsp. lemon extractAdditional sugar and cinnamon 1. Mix the sugar, salt, cinnamon, nutmeg and flour together. Set aside.2. Add the vinegar to the thinly sliced tomatoes and combine with the dry ingredients, stir well to blend. 3. Add the remaining ingredients except for the butter.4. Put into the unbaked crust, dot with the butter pieces and put the top crust on. 5. Seal the edges and cut slits in the top crust. 6. Sprinkle with additional sugar and cinnamon. Bake at 425 degree for 60 minutes or until the tomatoes are done.

Bartending Terms

Drinks requiring only shaking are covered with a plastic shaker cup and mixed within the glass; whereas shaken and strained or stirred and strained drinks are originally mixed within (a) shaker cups (glass & stainless steel) and then transferred to a glass. Remember to always fill your shaker full of ice before mixing drinks requiring either stirring/shaking and straining. The same applies to glassware; always start with a full glass of ice.

*SAFETY PRECAUTIONS*

Please keep in mind that while directions such as “shoot drink”, “drink without using hands”, “ignite drink”, or “while leaning head over bar pour drink into mouth” are all authentic recipe components, they are only suggestions and should not be attempted if you feel that they might pose a hazard to your health. Make certain to never carry or transport a lit drink, as alcohol is a flammable liquid and should be respectfully treated as such. Before drinking, completely extinguish any drink suggesting ignition.

Always overstock on ice, fresh resupply is critical in the maintenance of professional standards. Whenever glassware or bottles are broken in the vicinity of the ice bin, melt the ice with hot water, clean the bin, and restock with new ice.

Ice

Ice can be one of the most important factors in determining a drink’s quality. Generally speaking, the small square-shaped “slices” usually referred to as “bar” ice are best. Aside from preventing premature blender destruction, the smaller style ice cube, will by virtue of increased surface area, make for a significantly colder drink. The resulting reduction in vapor pressure (fumes) from the alcohol makes for a more palatable mixed drink.

As mentioned before in the section on Ice, whenever glassware or bottles are broken in the vicinity of the ice bin, melt the ice with hot water, clean the bin and restock with new ice.

Liquor Measurement

The use of a shot system has been adopted, whereby a shot is equal to whichever size jigger you use, keeping in mind that the recipes are based on a 1 1/2 oz. shot. When using a different size jigger, correct proportioning can be main­tained by using larger glassware and more mixer if the “shot” is bigger or vice versa if smaller. Use a 1 1/4 oz. shot and the specified sizes and measurements for a milder recipe variation. Splashes are 1 oz., scoops are 4 ozs. and dashes are from 3 to 5 drops. This system was chosen not only because it’s quick and easy to use but most importantly, because it’s adaptable to your bartending style.

I Love German Wine and Food - A Pfalz Riesling

If you are looking for fine German wine and food, consider the Pfalz region of southwestern Germany. You may find a bargain, and I hope that you’ll have fun on this fact-filled wine education tour in which we review a local Riesling.

The Pfalz region is just about as far as you can get from Berlin and still remain in Germany. Just over the border lies the famous French wine-producing region of Alsace. In fact, one major Pfalz wine producer has extensive vineyards on the other side of the French border. Its grapes are considered German or French, depending on where they are processed.

Has Pfalz been making wine for a long time? The wine museum in Speyer, Germany proudly displays a glass amphora containing 1600 year-old wine, perhaps the oldest wine in the world.

Pfalz is about 50 miles long, not far from the river Rhine. The best vineyards were in the hands of the Church until Napoleon’s visit. The region boasts of about 25,000 vineyards whose average size is less than 2.5 acres. Not surprisingly, most of these grape growers are part timers. Pfalz was traditionally the number one German wine producing region. It now ranks number two, not far behind its northern neighbor Rheinhessen in both total wine production and vineyard acreage. This area is sometimes called The Palatinate, and has been called the Tuscany of Germany. As you might guess from its extensive wine production, the region enjoys a mild climate. Who would have thought that figs and lemons grow in Germany? They do in the Pfalz.

White wine represents about 80% of the total wine production. The two top grape varieties grown here are Müller Thurgau, a German developed hybrid, and the often noble Riesling. The most common red grape is the Portugieser variety, but you can find Pinor Noir here, especially if you ask for Spätburgunder, its German name. About 10% of Pfalz wine is classified as basic table wine, over 70% as middle quality QbA wine, and the remainder higher quality QmP wine.

The German Wine Road crosses the Pfalz region. Virtually anywhere you go on this road you can find something worth seeing, worth tasting, and I daresay worth eating. One place to visit is Deidesheim with its historic houses, town hall (Rathaus), and churches, especially the Gothic Church of St. Ulrich. Every Pentecostal Tuesday the church’s entry is the site of a billy-goat auction, folk dancing, and a parade. The neighboring village of Lambrecht pays a tribute of a billy goat to Deidesheim for grazing rights, and has been doing so for more than six hundred years. The area includes the Schloss Deidesheim, a castle first built in the Thirteenth Century. The present castle was built in 1817. The original castle’s moats are now gardens. Other attractions include local artists, and the wine estates of Pfalz’s major producers, the three Bs, Bassserman, Buhl, and Bürklin.

Before reviewing the Pfalz wine and imported cheeses that we were lucky enough to purchase at a local wine store and a local Italian food store, here are a few suggestions of what to eat with indigenous wines when touring this beautiful region.
Start with a Pfälzer Teller (Bratwurst).
For your second course enjoy Schönhof Pfannchen (Ham Gratin in Brandy Cream Sauce).
As a dessert indulge yourself with Rotweinkuchen (Red Wine Cake).

Lingenfelder Bird Label Riesling 2004 11% alcohol about $13

Let’s start by quoting the marketing materials. Bottles of Rainier Lingenfelder’s ornithological labels are deservedly sought-after, because they offer excellent quality at very good prices. This off-dry Riesling, which pairs beautifully with medium-spiced Thai dishes, is a perfect example. You get lovely, rich fruit (tropical, melon, citrus), zesty acidity, and great balance, It’s a perfect pick-me-up for dreary winter days, too: open a bottle and sip it before dinner.

Before my review of this wine, I’d like to make a brief comment on the bottle. I don’t think that I ever found a bottle harder to open. It may happen twice, but it certainly won’t happen three times or more. And now for the review of the wine itself.

My first pairing was with a cheeseless lasagna. The wine was very pleasant with nice fruit and lightly acidic. The acidity did a good job of cutting the meat’s grease. When it encountered a slice of poppyseed cake the wine became more acidic but remained very good. It tasted of melon and citrus fruit.

This Riesling next accompanied baked filo dough rolls covered by sesame seeds, stuffed with ground chicken and peas, and topped with a Middle Eastern salsa. The salsa was moderately spicy and included tomatoes, red peppers, and onions. This pairing was quite successful. Once again the wine’s acidity cut the meat’s grease, and the salsa intensified the wine’s fruit. The meal’s conclusion was not as fine; a slice of apple cake containing mint chocolate was simply too sweet for the wine. Interestingly enough, the cake did intensify the wine’s citrus taste.

I then tried stove-top cooked chicken in a sauce containing paprika and cumin, potatoes and tomatoes. The wine was quite fruity; this time I tasted lime. It was refreshingly acidic.

The only German cheese available in my favorite imported cheese store was a Limberger. This cheese is famous for its pungent smell, being the target of comedy by Mark Twain, Charlie Chaplin, Abbot and Costello, Looney Tunes and others. Limberger is a cow’s milk cheese with a soft interior. When I bought this cheese it had virtually no odor but by the time I paired it with this wine the odor started to develop. The wine was able to retain its fruit but did have a flat aftertaste. In the presence of a ripe French Camembert, a cheese made from unpasteurized cow’s milk, the wine lacked fruit, but as if to compensate, also lacked an aftertaste. Neither pairing was successful.

Final verdict. I like this wine, and I like its price. I will probably give the bottle one more chance. But if I have more trouble there are plenty of other German Rieslings out there.

Restaurants - All You Can Eat

If you want to know what so many Americans are overweight, all you need to do is take a look at all the all you can eat establishments that are popping up all over. The craze is beyond out of control. It’s become an absolute epidemic with each place trying to outdo the other in price and selection. If you’ve never experienced this phenomenon, sit back and take a deep breath. If you love food, you’re going to love this review.

All you can eat restaurants are just that. You walk on, pay one price and you can stay as long as you like and eat as much as you like. I guess they figure that most normal people can only eat so much and won’t consume more than what they’re charging, which is still reasonable in most cases. However, with the stiff competition these days, many of the restaurants are practically giving the food away. It isn’t unheard of to walk into one and get an all you can eat buffet for under $10.

So what exactly DO you find at an all you can eat restaurant? Well, that’s not an easy question to answer. Unlike other types of restaurants they usually specialize in certain types of foods or at least have a limited selection, all you can eat restaurants have just about anything. And unless you specifically know what a particular restaurant has before you walk in, there is just no way of knowing if they’re going to have something that you’ll even like eating. Some places will have some kind of a features list posted outside on a sign so you’ll at least have some idea. Others will have the kind of food they serve included in the name of the restaurant itself. For example, one place in the states is called “Country Buffet”. So you at least have a clue what you’re going to find.

The way these places operate are simple. You walk in, pay your fee, which is anywhere from $9 to $20 per person and then find yourself a table. They’ll give you a marker for your table that you have to keep there for your entire stay so they know you’re still actively eating. After that, you simply walk around the place and pick out the foods you want. Yes, it’s self serve. However, they have quite a full staff at these places. You’ve got the people who have to clean the tables, the people who restock the food trays and the folks who serve you special items that they keep behind counters. These vary from counter to counter. Most of the workers are simply there to restock.

The quality of the food varies from place to place. Some are good, others are just okay. It’s hard to find a place where the food is what you would call excellent because they have to cook these things quickly so there’s no time to make anything really fancy. So if you’re expecting top quality food, you’re going to be disappointed. But if you’re looking for something that tastes good and is relatively cheap, especially if you’re a big eater, then an all you can eat place may be just the thing you need.

b). For step 4: 200g (7 oz) pork 1 teaspoon cooking wine 1 teaspoon soy sauce
c). For step 6: 1 tablespoon bean paste 4 tablespoons soy sauce 1 teaspoon sugar 1 tablespoon cooking wine dash of monosodium glutamate
Method:
Place cloth over sieve and drain bean curdCut bean curd into 1cm (1/2″) pieces. Heat 1 tablespoon oil and fry half of the cut bean curd until light brown. Add more oil and fry remaining bean curd. Slice meat, marinate. Also slice mushroom, bamboo shoot, green onion and ginger. Cut red pepper and garlic into half. Parboil sweet peas Heat 1 tablespoon oil. Add and fry in this order: green onion, garlic, ginger, red pepper, meat, bamboo shoot, mushroom and sweet peas. Add fried bean curd. Mix seasoning together, add to pan and mix gently so as not to break bean curd. Serve.
